    Born from the creative mind of Australian Ilario Colli, SoulBytes offers more than just quality food and coffee. Stepping into the restaurant, I could feel the friendly vibe as the interior, designed by Caroline Usher of “Ushers by Design” is set with classic-style furniture and modern touches. The space is cozy with a big mural on one side and a library like nook on the other side. A bar is standing in the middle of the space, while a coffee roaster machine, a bakery room and an open kitchen are located at the far end.

    Ilario is very much inspired by philosopher Alain de Botton who stated in one of his books that an ideal modern restaurant is one that reminds people to be more tolerant and become a better person. That is why SoulBytes aims to not only nourish the stomach but also the soul. “We hope that our customers, as they leave the restaurant, are more enriched as a person than when they came in,” Ilario stated as he greeted my friends and me at our table.

    The restaurant has a positive atmosphere that comes from the decoration, such as a sculpture of Socrates’ bust on a wall and a round tile on the floor that said “Hug Spot”. “The ‘Hug Spot’ works like a mistletoe,” Ilario continued. “When two people stand underneath the mistletoe, they have to kiss. Here, when two people stand on the ‘Hug Spot’, they have to hug each other.” And the surprise doesn’t stop there...

    Quality Food
    Open from 8 a.m. to 6 p.m., SoulBytes presents delectable selections of all-day breakfast and lunch menu. Everything seems to be so mouth-watering that my friends and I decided to choose a number of dishes so we can try a little bit of this and that. As our dishes were served one by one, we knew we made the right choice because all of them were spot on and were presented in generous portions.

    From the all-day breakfast menu, my personal favorite is the Mushroom Truffled Eggs. Consisting of sautéed mushrooms, poached egg and porcini salt on top of multi-grain bread and truffle oil, this dish is amazing to start the day. The Cured Salmon is also a refreshing choice as the Tasmanian salmon is marinated with beetroot and is served with hash brown and créme fraiche. And of course, the famous Egg Benedict is also one of the stars of the breakfast menu, where perfectly soft-poached eggs are presented with English muffin, cured salmon and delicious hollandaise sauce.

    The lunch menu is just as interesting. The ‘Soul Bites’ list gives us the freedom to pair either a bagel, a pretzel, and a sourdough with choices of savory toppings, like beetroot-cured salmon, ham and cheese, smashed avocado, wild mushroom and spinach, lemonrubbed chicken or prosciutto and buffalo mozzarella. We opted for a bagel with salmon, and the dish is even more fulfilling with horseradish cream, cheese, dill and red onion rings. The ‘Soul Salads’ presents choices of refreshing greens – and our favorite was the flavorful grilled broccoli and almond flakes that come with tasty grilled chicken, chili salt and lemon yoghurt. Last but not least, the ‘Soul Burgers’ are surely not to be missed – our choice fell on the Rock of Sisyphus which is so delicious with a juicy Australian beef patty, tomato relish, pickles, onion jam, cheddar cheese and soft homemade buns.

    SoulBytes also presents choices of vegan-friendly dishes. From the ‘Grain & Cereals’ option, they have Vegan Nut Porridge (with almond milk, banana, brown sugar and coconut syrup), Bali Granola, Organic Vego Fried Rice and more. The Dark Comedy from the ‘Soul Burger’ list is also a top-notch for vegans with a black bean vegetable patty, beetroot jam, rocket and tomato.

    All Homemade
    The restaurant is made even more outstanding since they make almost everything homemade with the use of local ingredients, from baked goods to coffee blends. The bread, bagels, sourdoughs, croissants and even butter and selections of jam are all made in-house, resulting in sensational fresh-from-the-oven delicacies.

    The coffee selections will please every coffee connoisseur as SoulBytes roasts the beans and creates their own house blends. “We buy non-roasted beans from different distributors and we do our own coffee profiling,” Ilario explained. “We combine certain beans together to make our own signature house blend. On top of that, we use single origins for our manual brews.” Choices of signature coffee include Bullet Proof with natural coconut oil and unsalted butter, Gibraltar with double shot of ristretto, and more, while some of the ‘Manual Brews’ are Vietnam Drip and French Press. Selections of standard coffee like cappuccino, espresso, café latte, macchiato, affogato and more are also offered. A little tip, pair a choice of brew with homemade croissants, jam and butter – I think this is the best way to end a soulful dining experience at SoulBytes.

    • Coffee Charity: with every order of standard coffee (like cappuccino and Americano), you’ll be invited to give back to the community. The staff will present you a wooden token which you can put in one of the three jars at the bar – each token represents Rp. 1,000 and each jar represents a foundation where the funds will be donated to.
